Don't wave the big Porcino mushroom

Siete mai andati a passeggio per cercare dei funghi?
La regola fondamentale per chi va a raccogliere funghi è MENTIRE SPUDORATAMENTE; mai vantarsi dei funghi trovati con persone che incontri nel bosco; mai e poi mai sventolare il "guarda che porcino gigantesco che ho trovato!!" per farlo vedere al tuo ragazzo che è sul balcone, perché vuoi che sia fiero di te; mai dire dove si è stati veramente a passeggio usare sempre la frase "sono stato da quella parte!!"

I funghi nascono e crescono nell'arco di una notte, una persona che non è esperta, con 3 ore  potrebbe trovare solo un paio di funghi che non basterebbero nemmeno per condire una bruschetta.

Io ho camminato solo 40 minuti e in questo lasso di tempo ne ho trovati abbastanza per farci il sugo per due persone. Avrei potuto condirci qualsiasi tipo di pasta, ma ho deciso che se avessi fatto la pasta fatta in casa sarei stata molto più soddisfatta di quella domenica mattina; quella bellissima domenica mattina in cui ho raccolto, ho pulito e poi ho preparato i primi funghi porcini raccolti da me.

Ho cambiato cucina, ho cambiato casa, ho cambiato città, ho cambiato regione: ho trovato i PORCINI.

PASTA FATTA IN CASA CON SUGO BIANCO AI FUNGHI PORCINI


Per la pasta (gli ingredienti sono per 1 kg di farina, per due persone io uso tra i 150/180 g di farina)

1kg farina
8/9 uova (dipende dalle dimensioni dell'uovo)
sale q.b. (molte nonne non lo mettono)

Preparazione: Disporre la farina a fontana. Al centro della fontana mettere le uova (sia tuorli che albumi) e il sale. Sbattere le uova all'interno della fontana, dopodiché iniziare ad incorporare la farina alle uova. Impastare per almeno 10 minuti fino ad ottenere un composto liscio e omogeneo. Far riposare per un'oretta.
Stendere la pasta in sfoglie di più o meno 20 cm di lunghezza tagliare con un coltello a striscioline per ricavare la pasta tagliatella, oppure con la macchina per la pasta. Far cuocere per qualche minuto in acqua bollente e salata, poi condire con il sugo.

Per il sugo

400g/500g di porcini freschi
Olio
Aglio
Prezzemolo

Preparazione: pulire i funghi accuratamente (con un coltello togliere a secco la terra dal gambo del fungo. Quando tutti i funghi saranno puliti dalla terra, schiacquarli ad uno ad uno sotto l'acqua. Non lasciateli in ammollo altrimenti assorbirebbero troppa acqua). Dopodiché tagliateli a cubetti piccoli. In una padellina con un po' di olio far rosolare un po' di aglio, aggiungere i funghi. Lasciare cuocere per una decina di minuti.
A fine cottura aggiungere prezzemolo. N.B. è consigliato utilizzare anche una piccola noce di burro per rendere più umido il sugo.

Have you ever been in the woods to look for mushrooms?
The basic rule for those who have just return from mushroom picking to LIE; never tell boast your self about the mushrooms you’ve found with people you meet in the woods; never, ever, wave the "look what giant mushroom I‘ve found!" to show it to your boyfriend that is on the balcony, because you’ll like him to be proud of you; and never say where you went really walking, always use "I went that way!"

But a person who is not an expert, in 3 hours could find just a couple of mushrooms which are insufficient even for a bruschetta.

But I walked only 40 minutes and during that time, I found enough to make a sauce to put on pasta for two people. I could have use any type of pasta, but I decided that if I made homemade pasta that Sunday morning would have been much more satisfying, that beautiful Sunday morning in which I collected, I cleaned and then I cooked for the first time mushrooms collected by me.

I changed my kitchen, I moved, I changed the city where I was living, I have changed the region: I found the my first Porcini Mushrooms.

HOMEMADE PASTA WITH WHITE PORCINI MUSHROOMS SAUCE


For homemade pasta (the ingredients are for 1 kg of flour, for two people I use between 150/180 grams of flour)

1kg flour
8/9 eggs (depending on the size of the egg)
salt  (Many grandmothers don’t use salt)

Preparation: Place the flour like a little mountain on the table and make a hole in the middle of it. At the center of the flour put the eggs and salt. Whisk the eggs inside until they are all mixed, then start incorporating the flour with the eggs. Knead for 10 minutes, until mixture is smooth. Let it sit for an hour.
Roll the dough into sheets of  20 cm in length and with a knife cut into strips to get the pasta noodles shape, or if you have it use the pasta machine. Cook for a few minutes in boiling salted water, then cover with the sauce.

For the sauce

400g/500g of fresh Porcini mushrooms
Oil
Garlic
Parsley
Preparation: Clean the mushrooms carefully (with a knife remove the dirt from the stem of the mushroom. When all the mushrooms will be clean, rinse one by one under the running water. Do not leave them to soak otherwise they would absorb too much water). Then cut them into small cubes. In a pan put oil and brown a bit of garlic, then add the mushrooms. Cook for about ten minutes.
When it’s cooked, add parsley. If you’ll like I recommended to use a small knob of butter to make the sauce more liquid.
